Pods traditionally used as antidiarrheal remedy due to high tannin content. Seeds produce locust bean gum (E410), used medicinally as a cholesterol-lowering agent and blood sugar regulator. Pod powder serves as natural cough suppressant and digestive aid. Leaves and bark used in folk medicine for their astringent properties.
Kitchen
Ripe pods eaten fresh or dried as sweet snack (42-52% sugars). Ground pods create cocoa-substitute powder for beverages, baking, and confections - naturally caffeine-free with chocolate-like flavor. Seeds yield locust bean gum, important food thickener and stabilizer. Traditional syrup (dibs) made from pod extraction in Middle Eastern cuisine.
Ecology
Native to Mediterranean basin, thriving in hot, dry climates with as little as 250mm annual rainfall. Nitrogen-fixing through rhizobial associations, improving soil fertility. Provides habitat for birds and small mammals. Flowers attract beneficial insects. Fire-resistant species important for reforestation. Tolerates salt spray and poor soils.

Evergreen tree with pinnately compound leaves of 2-5 pairs of glossy, leathery leaflets. Dark brown, flat seed pods 10-30cm long, becoming sweet when ripe. Small red or green flowers in racemes, usually dioecious. Bark dark brown and rough. Seeds extremely hard, uniform in weight (200mg), rattling in ripe pods.
Building & Timber
Heavy, hard wood (density 800kg/m³) with attractive reddish-brown heartwood, taking excellent polish. Used for furniture, turnery, and marquetry. Traditional use for tool handles and walking sticks. Resistant to decay but difficult to work. Not commercially significant due to slow growth and irregular grain, more valuable for pods than timber.
Curiosities
Seeds so uniformly weighted they originated the 'carat' measurement for gems and gold. Pods allegedly sustained John the Baptist in wilderness (St. John's Bread). Claimed as the 'prodigal son's husks' from Bible. Can live 200+ years and fruit for centuries. Ancient Egyptians used pod extract in mummy preservation.
